Kind of grapes: 100% Primitivo

Creation: From old vineyards located in the heart of the Salento area come the best grapes of Primitivo that are hand-picked and carried into our cellars where they are gently squeezed. The must undergoes  to délèstage and (temperature controlled) pre and post-fermentation maceration. After that, a long aging of 24 month in big barrel of  Slavonian oak and at least, 1 year of resting time in bottle, give to the MATER his full body and great taste.

Colour: Dark ruby red with violet reflexes that, after aging, turn on garnet red.

Bouquet: Intense, resolute but delicate with hints of ripe fruit, prunes, black cherry and delicate nuances of vanilla.

Taste: Vigorous, strong, finely persistent, recalling liquorice and hazelnuts; good structure with a fruity and persistent end.

Pairings: Excellent with roasted and braised meats but also with aged cheese.

Alcohol con.: 14% by vol.

Total acidity: 5,5-6 g/l.

Best served at: 18° C ( 65° F.)
